tidak puas hati dengan juadah Laksa Nyona sebuah
hotel terkemuka di ibu negara baru-baru ini.
Bukannya terkejut dengan apa yang dingomel oleh Datuk Chef Wan, tetapi sikap acuh tak acuh chef hotel berkenaan yang telah menyediakan hidangan tempatan yang tidak mengikut resipi yang betul.
Nasib chef berkenaan agak malang, kerana hidangan terkenal masyarakat tempatan itu telah dirasai oleh seorang pakar masakan tanah air yang juga duta hidangan negara di peringkat antarabangsa.
Bagi pandangan Murai Batu, kalau hidangan itu disediakan kepada tetamu luar, tidak mengapalah. Bolehlah mereka mahu kelentong, tetapi kalau sudah Datuk Chef Wan merasainya sendiri. Jadi salah orang lah nampaknya.
Apatah lagi, hidangan tempatan tidak kira Melayu, Cina,Baba, Nyonya mahupun India adalah kepakaran Datuk Chef Wan. Kalau tidak, mana mungkin dia mendapat gelaran Datuk dan Selebriti Chef Terbaik Dunia.
Menurut hasil tulisan Datuk Chef Wan, Laksa Nyonya berhargaRM40 yang disediakan oleh hotel mewah berkenaan tidak memiliki citarasa sebenar resipi berkenaan, bagaikan sudah terlebih rempah.
Kekecewaan Datuk Chef Wan itu telah dikongsi dengan pengurus restoran berkenaan dan nampaknya telah mendapat maklum balas positif bukan sahaja daripada peminatnya, malahan juga pihak hotel berkenaan.
Menurut sumber kepada Murai Batu, Datuk Chef Wan yang ditemui dalam sebuah majlis fesyen petang semalam, telah dihubungi oleh pihak restoran hotel mewah berkenaan dan meminta maaf dengan insiden berkenaan.
Alamak, lega Murai Batu dengar berita ini. Harap-harap pihak hotel berkenaan dapat mengambil tindakan setimpal supaya tidak berlakunya insiden seperti ini lagi.
Ketika ditanya oleh pihak media semalam, Datuk Chef Wan secara peribadi telah meminta maaf dengan pihak hotel berkenaan sekiranya tulisannya itu telah menyinggung perasaan pihak terbabit kerana ada sebahagian ditulisannya hanyalah sebagai lawak jenaka semata-mata.
Datuk Chef Wan memberi tahu, bahawa apa yang dituliskannya itu tidak lain tidak bukan hanya untuk menegur pihak berkaitan untuk menyediakan hidangan tempatan mengikut resipi yang tepat, tanpa mengubah citarasa asal.
Baginya, setiap hidangan tempatan haruslah disediakan mengikut piawaian yang tepat bukan sekadar melepaskan batuk di tangga. Asalkan bahan-bahan dan citarasanya asli, tidak ditokok-tambah. Betul tak?

I have the right to criticise, says Chef Wan/Google ImagesPETALING JAYA: Celebrity chef Datuk Mohd Redzuawan Ismail, or commonly known as Chef Wan, has defended his role as the Malaysian Tourism Food Ambassador over his act on criticising a five star rated hotel for failure to serve a recipe at its best.
Chef Wan said the criticism was not made due to the unsatisfactory recipe of the Laksa Nyonya prepared by the chef of the hotel restaurant but it was more due to his concern over the country's food industry being tarnished by a mistake that was not meant to happen in the first place, mStar Online reported today.
Chef Wan expressed his disappointment in Instagram /Google Images"I have travelled across the world to promote and introduce Malaysian traditional cuisine and when such occurrence happen, it brings me shame and anger that a five star hotel in this country would serve such tasteless and a not well prepared recipe to their customer.
"Imagine if a tourist had come to our country to explore that particular local cuisine, it would bring a different perception towards the cuisine aside from bringing a bad image towards the local food tourism industry," he said to mStar Online when contacted here on Wednesday.
Last Sunday, Chef Wan had uploaded the photo of the Laksa Nyonya on his personal Instagram account and slammed a five star hotel in Kuala Lumpur after personally finding the food served less satisfactory and differed from what was shown in the menu.
He added on his Instagram, "why pay RM40 for a plate of Laksa Nyonya when the preparation was even wrong?”
Chef Wan even slammed a few cooks whom he thought was too lazy to learn the proper preparation method and that the group of chefs should be 'shot to death' for tarnishing the country's heritage.
On the related event, Chef Wan said he had informed the restaurant manager who had promised they will fix the dish in the future.
Chef Wan said it is important for the chef in the country to adhere to the country's heritage and the proper preparation method of serving the dishes in order to preserve the traditional cuisine.

"As the Malaysian Tourism Food Ambassador, I have the right to criticise if I find the dish to be improperly prepared, especially if it is our own local cuisine," he said.
Meanwhile, commenting on some of the negative view on his criticism, Chef Wan said he was not bothered over the opinion of others as he opined the image of Malaysian dishes should be well taken care of.
"Maybe I have disadvantages as a chef but my experience in the food industry has been far too long and if there are any shortcomings, I would definitely comment on it.
"Those who gave negative comments towards my criticism probably don't understand the responsibility I hold as a (food) ambassador," he said.
In the meantime, Chef Wan advised cooks in the country to be more sensitive towards the preparation of a dish aside from learning the proper cooking techniques.
He said a lazy attitude and not being able to accept criticism should be left behind if one wants to flourish in the culinary field.

Chef Wan Mengamuk Restoran Salah Resipi?
Semalam, chef selebriti Malaysia iaitu Redzuawan Ismail atau lebih dikenali sebagai Chef Wan dipercayai mengamuk di laman Instagram-nya selepas menikmati hidangan di sebuah restoran yang tidak dinyatakan lokasinya.
Amukannya itu telah menimbulkan pelbagai spekulasi dikalangan pengikut laman sosialnya dan rata-ratanya menyokong tindakan Chef Wan yang ingin melaporkan ketidakpuashatiannya terhadap restoran itu.
Menerusi laman Instagram miliknya, Chef Wan telah meluahkan rasa kecewa apabila makanan yang dihidang umpama indah khabar dari rupa.

Sewaktu di restoran tersebut, Chef Wan telah memesan hidangan Laksa Nyonya, namun setelah menerima pesanannya, Chef Wan terkejut kerana apa yang diterimanya tak ubah seperti mee kari biasa dengan rempah yang pekat.
Mahir dalam bidang masakan, Chef Wan mendakwa bahawa restoran tersebut telah menggunakan resipi yang salah dan dia turut menggambarkan rasa hidangan tersebut hampir sama dengan rasa makjun.

Walaupun tidak berpuas hati dengan hidangan itu, Chef Wan tetap membayar harga hidangan sebanyak RM40.
Chef Wan bertindak demi menjaga nama baik negara
Bimbang reaksi pelancong terhadap masakan Malaysia, Chef Wan memandang serius berhubung isu ini demi menjaga nama baik negara.
My concerned is when other foreign guests order this dish they will totally get the wrong impression of the dish when its more like Mee Kari. Sudah la pekat rasa pun tak senonoh.
Dalam pada itu, Chef Wan turut menyatakan semakin banyak tukang masak yang malas belajar cara memasak dengan betul.
Sebagai tambahan, Chef Wan akan berjumpa dengan General Manager restoran tersebut berhubung kes itu agar resipi masakan Melayu kekal terjaga.
