Chinese New Year Auspicious Yee Sang Recipe

Gather your friends and serve up a Chinese New Year yee sang at home with this easy recipe. Remember to toss as high as possible while saying “lou sang”, “lou sang” together as auspicious blessings of good fortune and prosperity

Yee Sang
Chinese New Year Auspicious Yee Sang Recipe
(Serves 10)
Ingredients A
150 g carrot, shredded
150 g radish, shredded
100 g jellyfish
50 g pomelo sacs
40 g papaya pickles
40 g ginger young pickles (white)
40 g ginger young pickles (red)
40 g leek pickles
40 g cucumber pickles
30 g crispy yam (red), shredded
30 g crispy yam (green), shredded
20 g dried preserved lime, sliced
Ingredients B
2 pkts deep-fried flour crisps
50 g ground peanut
30 g sesame seeds
5 g five-spice powder
5 g white pepper powder
Ingredients C200 g salmon, sliced
Juice of 1 lime
Ingredients D
2 stalks spring onion, shredded
1 lime leaf, shredded
1/2 red chilli, shredded
For the sauce300 g plum sauce
50 g olive oil

Method:
1. 
Arrange all components of Ingredients A in small mounds, side by side on a round plate.
2. Scatter Ingredients B all over the different mounds.
3. Squeeze fresh lime juice over salmon slices and arrange the salmon slices on top in the centre of the plate.
4. Pour in the plum sauce and olive oil all over the mounds of Ingredients A.
5. Garnish with Ingredients D. Serve up immediately.
